The role of a Chief Cook is essential in maintaining the health, morale, and well-being of offshore crew members. Working aboard vessels, barges, and rigs across the Middle East, the Chief Cook ensures the delivery of high-quality meals, seamless galley operations, and compliance with strict safety and hygiene standards. This position requires strong culinary expertise, leadership abilities, and the resilience to work in demanding offshore environments.

Responsibilities

  • Plan, prepare, and serve diverse menus including Arabic, Indian, and Continental cuisines for 30–100 crew members.
  • Manage kitchen inventory, procurement, stock levels, and cost control while minimizing food waste.
  • Ensure full compliance with HACCP, ISO 22000, and all sanitation and food safety standards.
  • Supervise and train kitchen staff, including chefs and stewards, and manage shift schedules.
  • Prepare daily meal reports, maintain digital logs, and track budgets using MS Office or Google Suite.
  • Customize meals to meet dietary restrictions, cultural needs, and crew health requirements.
  • Oversee equipment maintenance (ovens, grills, refrigeration) and coordinate timely repairs.

Requirements

  • 3–5 years of proven experience as a Chief Cook, preferably in offshore or maritime operations.
  • Strong knowledge and hands-on experience in Arabic, Indian, and Continental cuisines.
  • Previous offshore experience on vessels, barges, or rigs with willingness for 6-month rotations.
  • Good command of English (written and spoken).
  • Computer literacy, including Excel, Word, and inventory management systems.
  • Age below 50 and able to commit to a minimum 2-year contract.
