Responsibilities
As a Sous Chef at Viking, your key responsibilities will include:
- Assist the Executive Chef and Chef de Cuisine in overseeing Galley operations.
- Ensure safe, high-quality food production and maintain guest-oriented service standards.
- Supervise and train Galley personnel, leading a multi-cultural team to achieve departmental goals.
- Conduct inventory checks, control equipment, and monitor stock levels to minimize shortages or waste.
- Lead service lines, ensuring smooth operations, presentation, and final plating.
- Enforce cleanliness standards and proper use of personal protective equipment (PPE).
- Participate in loadings, inspections, and special events to guarantee quality and compliance with Public Health Policies.
- Temporarily assume the Executive Chef or Chef de Cuisine role when necessary.
- Maintain records, schedules, and reports in line with company and maritime labor standards.
Requirements
- Minimum of 8 years of culinary experience, including at least 3 years as a Sous Chef or equivalent.
- Advanced culinary skills with creativity in food preparation and presentation.
- Fluency in English with excellent communication skills.
- Experience leading multi-cultural teams and managing stress in high-pressure environments.
- Proficient in PC-based systems for administration and reporting.
- Knowledge of Public Health Policies and hygiene standards.
- Physically capable of handling 50+ lbs daily and working long hours.
- Previous cruise industry experience is advantageous.
- Must be at least 21 years old.
